Cook Book: Kitchen by Nigella Lawson
Week number 2 of the “Cooking Something New Challenge” and I have decide to make something a little different… we love hummus and I love peanut but so why not try a combination of the two?
I found this recipe while browsing though Kitchen by Nigella Lawson looking for something grand to cook. I was quite sceptical to start with and when I mentioned what I wanted to cook to the other half, it was suggest that I make half without the peanut butter so I don’t ruin it all.
The recipe was very very easy to follow, I have never made humus and I must say its lot easier that I thought was going to be, used a really good quality olive oil and it (non-peanut butter version) tasted better than the standard store bought stuff, not as good as the hummus we get from our local whole food shop, but I think with a bit of playing with the recipe I think I could get it that good too.
And with peanut butter? surprisingly it was quite nice, and I think would be good for a dinner party with apple pieces or some other fruit. We didn’t manage to eat it all as this recipe really makes a huge amount, so think about this before you made the whole recipe. The wife took it (the non-peanut butter one) to work and fed her colleagues, who all seemed to like it.
So, would I cook this again? Yup, for a larger party (or summer bbq) I think it will go down well, just for at home… probably not, the hummus from our whole food shop is great and I could always just stir in some peanut butter to it… 🙂
