Cook Book: Kitchen by Nigella Lawson
We are still cooking with Nigella this week and trying out her twist on one of my favorite recipes. I have made Toad in the Hole about 5 times in the past and have always been disappointed by my efforts… will Nigella bring back the my childhood memories?
This is a pretty standard Toad in the Hole recipe with one major twist, instead of putting the sausages in whole you strip them out of their casings and turn them into mini-burger paddies, pre-frying them a bit to give them some colour before adding them to a backing tray and pouring in the batter.
The recipe didn’t set any particular challenges and it came out pretty well. I cheated a bit and instead of using a baking tray, I just poured the batter into the deep sided frying pan that I used to brown the sausage paddies in. It turned out pretty well and I got quite a rise out of the batter, not as much as Nigella has in the picture in her book, but almost there.
So, would I cook this again? Not sure really, it was ok, the sausages paddies were very nice (used good quality sausages) and the crisp batter was nice, overall the dish was a little dry so really should have made an onion gravy with it (as Nigella suggests)… but still even with gravy maybe I have out grown this dish and maybe it should just stay in the past. After subjecting the wife to 6-ish version of toad in the hole I think she will also be happy with the this decision.
Cook again? Undecided.
