Courgettes Pasta

Step into the green scene with a Courgette Pasta recipe, where twirly noodles and slender slices of zucchini strike up a summery romance, seasoned with a whisper of garlic and a wink of Parmesan.

Ingredients

  • 250 g Farfalle pasta bow ties
  • 25 g Butter
  • 2 Shallots finely chopped
  • 125 g Button mushrooms halved
  • 375 g Courgettes cut into 5 cm strips
  • 70 g Palma ham cut into strips
  • 200 ml Creme fraiche
  • 75 g Parmesan cheese grated
  • Freshly ground black pepper

Instructions

  • Cook the pasta in boiling water for 10 mins until just tender
  • Meanwhile melt butter in large frying pan & fry the shallots, mushorroms, courtettes, stirring occasionally for 6-8 mins
  • Stir in the Palma ham, creme fraiche, parmesan & pepper to taste
  • Drain pasta & mix with other ingredients, heat through and serve.
  • Enjoy.
