Nan’s Fruit Cake

Savor the sweet legacy of tradition with my Nan's Fruit Cake, a time-honored recipe where dried fruits and nuts mingle in a moist, spiced batter, creating a slice of family history in every bite.

Ingredients

  • 1 cup Sugar
  • 1 cup Sultanas or mixed fruit
  • 1 cup Milk
  • 4 ozs Butter
  • 1 1/2 cups Self raising flour
  • 1 Egg beaten

Instructions

  • Boil together the sugar, sultanas, milk, and butter for five minutes stiring all the time, until the mixture is syrupy and then allow to cool.
  • When liquid is cooled, add self raising flour (add slowly and mix carefully to avoid lumps)
  • Stir in the beaten egg
  • Bake in loaf tin at 325F (165 C (fan)) / 180C ordinary oven for about an hour.
  • Check after 55 minutes with a skewer to see if it is done (the skewer should come out clean with no sticky cake mixture on it)
  • Enjoy.
