Ingredients
- 1 cup Sugar
- 1 cup Sultanas or mixed fruit
- 1 cup Milk
- 4 ozs Butter
- 1 1/2 cups Self raising flour
- 1 Egg beaten
Instructions
- Boil together the sugar, sultanas, milk, and butter for five minutes stiring all the time, until the mixture is syrupy and then allow to cool.
- When liquid is cooled, add self raising flour (add slowly and mix carefully to avoid lumps)
- Stir in the beaten egg
- Bake in loaf tin at 325F (165 C (fan)) / 180C ordinary oven for about an hour.
- Check after 55 minutes with a skewer to see if it is done (the skewer should come out clean with no sticky cake mixture on it)
- Enjoy.
