Pasta Carbonara

Whip up a Pasta Carbonara where spaghetti throws a creamy, cheesy party with crispy pancetta, and every forkful feels like a secret handshake between Italy and your taste buds.

Ingredients

  • 225 g dried spaghetti
  • 150 g smoked pancetta sliced
  • 2 large eggs plus two extra yolks
  • 1 1/2 tbsp olive oil
  • 4 tbsp pecorino romano cheese finely grated
  • 4 tbsp double cream
  • Freshly milled black pepper

Instructions

  • Cook pasta
  • Meanwhile, fry pancetta in oil untli really crispy
  • Whisk eggs, yolks and cream and season generously with black pepper
  • Drain pasta leaving a little moisture still clinging.
  • Return to saucepan and add pancetta and any any oil in pan, along with the egg and cream mix
  • Stir thoroughly and serve with extra chesse.
  • Enjoy.
