Ingredients
- 225 g dried spaghetti
- 150 g smoked pancetta sliced
- 2 large eggs plus two extra yolks
- 1 1/2 tbsp olive oil
- 4 tbsp pecorino romano cheese finely grated
- 4 tbsp double cream
- Freshly milled black pepper
Instructions
- Cook pasta
- Meanwhile, fry pancetta in oil untli really crispy
- Whisk eggs, yolks and cream and season generously with black pepper
- Drain pasta leaving a little moisture still clinging.
- Return to saucepan and add pancetta and any any oil in pan, along with the egg and cream mix
- Stir thoroughly and serve with extra chesse.
- Enjoy.
