Peasant Pasta

Ingredients

  • 200 g Fusilli Pasta
  • 20 ml Extra Virgin Olive Oil for drizzling
  • 20 ml Regular Olive Oil for cooking
  • 2 medium Red Onions chopped
  • 150 g Mushrooms chopped
  • 2 large Tomatoes skinned and chopped
  • 15 g Sun-dried Tomatoes chopped
  • 2 cloves Garlic roughly chopped
  • 15 g Anchovies rough chopped
  • 1/2 tsp Chilli flakes
  • 1 tsp Salt
  • 20 g Coriander (or parsley) chopped

Instructions

  • Heat a good sized deep frying pan.
  • Add regular olive oil to the pan when hot and saute the red onions.
  • Add the mushrooms and tomatoes and saute quickly on high heat.
  • Add the garlic, anchoives, sun-dried tomatoes, chilli flakes, and salt.
  • Add the cooked pasta and mix well.
  • Add the coriander (or parsley) and remove from the heat.
  • Dizzle with the extra virgin olive oil and serve.
  • Enjoy

Notes

Interesting cooking fact: Never cook with extra virgin olive oil, it should only be used for salads and adding to dishes at the end. It has a very low tolerance for heat and therefore you will just cook away the flavour and add a bad one. Use regular olive oil for cooking instead as it has a higer smoke point than virgin or extra virgin oil. Check out Wikipedia on olive oil if you want to know more.
