Ingredients
- 200 g Fusilli Pasta
- 20 ml Extra Virgin Olive Oil for drizzling
- 20 ml Regular Olive Oil for cooking
- 2 medium Red Onions chopped
- 150 g Mushrooms chopped
- 2 large Tomatoes skinned and chopped
- 15 g Sun-dried Tomatoes chopped
- 2 cloves Garlic roughly chopped
- 15 g Anchovies rough chopped
- 1/2 tsp Chilli flakes
- 1 tsp Salt
- 20 g Coriander (or parsley) chopped
Instructions
- Heat a good sized deep frying pan.
- Add regular olive oil to the pan when hot and saute the red onions.
- Add the mushrooms and tomatoes and saute quickly on high heat.
- Add the garlic, anchoives, sun-dried tomatoes, chilli flakes, and salt.
- Add the cooked pasta and mix well.
- Add the coriander (or parsley) and remove from the heat.
- Dizzle with the extra virgin olive oil and serve.
- Enjoy
Notes
Interesting cooking fact: Never cook with extra virgin olive oil, it should only be used for salads and adding to dishes at the end. It has a very low tolerance for heat and therefore you will just cook away the flavour and add a bad one. Use regular olive oil for cooking instead as it has a higer smoke point than virgin or extra virgin oil. Check out Wikipedia on olive oil if you want to know more.
